Culinary Year in Review, or: My personal recipe highlights

Today is not only the last day of the year, my friends. Today, my small, modest blog half a year old. Therefore, I thought, I take a little look back at what there was to eat in the last six months and introduce you to my personal favorites 2010th Just starting here so has read almost no one, so I putter now the times one or another recipe from that time period; o)

And because Desserts outdo the "normal" courts almost always, we all make in two categories ... But now for the first time: the curtain for my five delicious main courses 2010!

mango and mozzarella salad

My very first post here and also a wonderfully refreshing salad that makes thanks juicy mango, creamy buffalo mozzarella and nutty argan oil for a true taste explosion. Very tasty too marinated and grilled crispy chicken legs!



Classic Tarte

My first attempt to make himself quiche, and immediately a great success! A wonderfully thin, crispy base, which has managed nearly as good as the copies I've eaten so much last year in Alsace.

A salad's own creation, which I was fully convinced. I love to eat beetroot, preferably in combination with feta. Dried dates and shallots make karemellisierte here for a sweet extra kick.

Since I've tried it a few years ago in France for the first time, mussels are one of my absolute favorite seafood. I especially love the crisp, Asian-inspired recipe from Tim maltster. For years, a classic in my family.

The combination of couscous with eggplant, caramelized onions and currants may sound unusual times, but it is a true taste experience. In no event shall omit currants, they make the dish really was special.

sweet and sour chili sauce


An absolute classic in my kitchen, just funk up every little too boring guessed Eating - Whether to fried noodles, spring rolls, grilled meat or mixed with sour cream as a dip. Once a bottle is empty, I have no rest until I've made new chili sauce.



Marzipan chocolates

Caramel syrup Chai

syrup although I have often boiled, but the idea of chai tea syrup to cook, I found it really awesome. Mixed with milk and enjoyed warm or cold the whole thing is really addictive!

Christmas Desserts 2010, Part 1: Panna cotta with coffee jelly


in my family at Christmas time I am for the Desserts responsible. While my mother takes care of venison and roast goose, I am going to look for an appropriate highlight for our sweet Weihnachsdinner. On Boxing Day after a fantastic crispy roast goose, traditionally served with red cabbage and dumplings, we've had this two-layered panna cotta. On top of the cream of this thin layer of jelly, consisting of coffee liqueur. panna cotta, since I've eaten many years ago for the first time in Italy, anyway my favorite desserts. One reason (besides the incredible creamy taste, of course) the fact that a panna cotta and over again can vary so wonderful: Whether with a fruity sauce, with spices that are grown under the cream, or as here with several layers, with a good basic recipe one can easily always prepare individual desserts. And it's so simple - like the chocolate mousse is the panna cotta, a good proof, that wonderful desserts often get by with very few ingredients ...!

In this recipe, the panna cotta made with very little gelatin, which she has a wonderfully creamy consistency. In this way, it is perfect if you want to serve in pretty glasses. The Who would overthrow cream, however, should increase the amount of gelatin. Oh yes, also come in the original recipe still crushed coffee beans into the cream, which I have to get forgotten, however, and omitted - but get the dessert without coffee beans and only by the liquor-layer has a great taste!

recipe
for four of

500g cream
50g brown sugar
1 vanilla pod
3 tsp coffee beans (you can also omit)
2 1 / 2 sheet of white gelatine
100 ml coffee liqueur (eg Kahlua)

After a few hours (according to the recipe three, with me rather five) is the Panna cotta so tight that you can prepare the jelly mirror. For the gelatine in cold water soak, heat the liqueur is now in a small saucepan, but do not boil! Gelatine, dissolve in the liqueur with stirring. Transfer the liqueur for 10 minutes, then carefully with a spoon to distribute the panna cotta. Covered in the refrigerator for at least another two hours cold.

recipe
for three people

2 tablespoons olive oil
1 onion
2 carrots 6 medium potatoes

10g dried porcini mushrooms
about 1 liter of vegetable
salt, pepper from the mill
each 1 / 2 teaspoon dried thyme and oregano
a pinch of freshly grated nutmeg
a pinch of Ras-el-hanout (you can also omit)
1 bunch chives

About 30 minutes before starting the cooking, the mushrooms in a bowl give to soak douse with warm water and drain. After the half hour wait, the onion, peel and dice, peel the carrots and cut first into slices, then into cubes. Peel the potatoes and dice. Then the mushrooms from the soaking water and take small pieces. Soaking water through a paper filter and collect.

For two weeks, I proudly call a new kitchen appliance my own: a sturdy blender together with the associated shredder:) Of course I also previously owned a blender, a cheap part of a drugstore. why I am currently also always looking for recipes in which I or my blender chopper (or both; o) can be used). Pasta And there should be times again. So why not, my first thought, just to make homemade pesto? Said and ... almost done. In the search for a recipe for red pesto me one for English Mojo fell into his hands. Is indeed the principle seems not too far from the pesto, I thought, just a little cumin and chili here, a little brighter as balsamic. All the ingredients in my new shredder thrown (goes of course, in blender or with immersion blender, so you to offer because you have more than my previous models Luschen o)) and within seconds the Mojo done. Mix with pasta, roasted pine nuts, parsley and parmesan cheese and enjoy.

In any case, my new favorite on-the-Fast-Pasta! And the solution for the days before Christmas, when the days may have actually 48 hours between last errands and preparations. recipe for three people

red Mojo
4 medium cloves garlic 2-3 fresh
red chili peppers
2 teaspoon paprika, paprika
ground 1 / 2 tsp cumin
1 / 2 teaspoon dried oregano
3 tablespoons wine vinegar
3 tablespoons olive oil
salt, pepper

also
300g spaghetti, salt
2 - 3 tablespoons pine nuts 1 small bunch parsley

50g Parmesan

the pasta in salted water according to package directions until al dente. Meanwhile, prepare the mojo: Peel But garlic and chop coarsely. Wash peppers, cut in half lengthways, stem cut, scrape out seeds and chop the peppers coarsely. As I have argued at the school papers, that was quite nice at times and then again ... well, un-nice. In biology, German and chemistry, it was never as bad as in other subjects. Since I could not get information, I could understand. These were subjects that I was clear. Nonetheless, my manner of performance was not exactly the best of all.
