fast everyday cooking, tortellini with ham and cream sauce

Sometimes, there has to be fast. Not much time to cook, but still feel like eating something good on. Specifically: On a large plate of steaming pasta with a delicious Sößchen. In that case I do this recipe. I buy good fresh pasta from the refrigerator and simmering to a quick ham and cheese cream sauce. So simple. And still so good. A quick heart and soul.


I got a little bit about whether I should post this recipe here. It's as plain and simple, everyday kitchen just right. My friend meant when I raised the question while eating in the room: "Well, maybe if you had the tortellini homemade ..." I did but then decided to post. Because the blog also myself to remember good recipes that I cook again could, even if they are still so simple. And because I own it certainly guess if I find in other blogs all the wonderful, sophisticated, sometimes very complex recipes, find a piece of everyday cuisine. Even for every day can be a bit of inspiration not hurt.

recipe for two people

fresh tortellini stuffed with cheese (amount to hunger)
salt, pepper 1-2 tablespoons butter

4 slices cooked ham 2 garlic cloves

100g peas (frozen) 1 tomato

200g cream 3 tablespoons freshly grated
Parmesan or pecorino (+ more for serving) take
freshly squeezed lemon juice to taste

peas from the freezer and let thaw. The cooked ham into 1 cm cubes. Peel the garlic and chop finely. Wash tomatoes, cut into quarters, remove seeds and cut into small cubes. Grate cheese into each preference rather fine or coarse.

In a large pot Salted water to boil. Tortellini according to package directions to cook and drain. Meanwhile, 1 tablespoon melted butter in a second pot, add diced ham and sauté over medium heat 2-3 minutes. Ham out of the pan, garlic and peas and maybe add some butter and cook over medium heat until the peas are heated completely. Ham and tomato cubes and add all simmer a few minutes.

Pour cream, bring to a boil and 10 minutes over medium heat, simmer until the sauce is a little creamier. Then add 3 tablespoons of grated cheese and melt into the sauce. Sauce with fresh squeezed lemon juice and pepper ground pepper to taste. (Salt is needed rather not, since the cheese is very salty.) Sauce mix with the tortellini and serve with plenty of grated cheese.
